Mary Berry’s chicken with tzatziki is healthy dish for quick dinner

Place the chicken breasts on a cutting board. Slice each horizontally down the middle and lay a baking sheet over them. Smash the chicken breast with a rolling pin until the breasts are a thin escalope.

Remove the baking paper from the chicken, and season both breasts with mustard powder, parsley, dill, salt and pepper. Drizzle them with oil.

Heat the frying pan until it’s very hot. Add in the chicken breasts and fry for about 2 minutes on each side, or until golden brown and cooked through. Set aside for the chicken to rest for a few minutes.

Make the tzatziki by mixing together yogurt, garlic, cucumber and mint in a bowl. Season with salt and pepper. Serve the chicken with tzatziki on the side or smothered on top.
