To keep potatoes fresh for up to 10 weeks, Mike suggests keeping them in your basement or a root cellar.
If you don’t have access to those, you can keep your potatoes in a drawer in your kitchen. Mike suggests refraining from washing the spud until use, distributing them equally on a wire rack, and placing them in a kitchen drawer.
