Mary Berry’s ‚all in one‘ hack makes yummy Victoria Sponge


We’d all probably bake a little more if it was made easier and, thanks to Mary Berry, it now is.

A video of her one bowl Victoria Sponge cake has been doing the rounds on TikTok, because it’s so simple and delicious. People have been left stunned by how easy it is to make.

The tutorial was shared by a user called neaglin, and it’s got a lot of people talking. Brits have been saying the recipe is so good that it’s „dangerous“, and it’s also super simple to whip up in a hurry.

After all, you only need to do is pop the ingredients into a bowl and mix them up. You can’t get much simpler than that.

The ingredient list isn’t that long either, as all you need is the following:

  • 225g margarine (from fridge)
  • 225g caster sugar (plus extra to sprinkle)
  • 225g self-raising flour
  • 1 tsp baking powder
  • 4x large eggs
  • 200ml double cream
  • 6-8 tbsp strawberry jam (approx.)

The method is also pretty easy too, so it should be a doddle to get your head around. This is a recipe that can be put together in a few simple steps.

  1. Preheat the oven to 180°C/ Fan 160°C/ Gas Mark 4.
  2. Grease two 20cm (8″) round sandwich tins, and line them with some grease-proof paper.
  3. Take a mixing bowl and measure out the baking spread, sugar, eggs, flour and baking powder. Mix thoroughly with a food mixer until the texture is silky and smooth.
  4. Divide the mixture evenly between your cake tins, and bake in a pre-heated oven for 25 to 30 minutes. You can check it’s cooked by lightly pressing the top of the sponge. If it’s baked properly, it should bounce back.
  5. Once cooked, leave it to cool down and then turn out the sponges gently. Make sure you take off the paper and allow it to cool down further on a wire rack.
  6. Then, take a bowl and whisk the double cream until it stiffens.
  7. Once the sponge has completely cooled, spread some jam on one sponge and put the cream on the other. From here, all you need to do is sandwich them together, and dust with a little caster sugar.

The video has been liked hundreds of times since it was shared on social media, and people think it looks amazing. The recipe seems very popular with budding bakers online.

One person said: „My one and only sponge recipe.“ Another added: „Always use this recipe.“

A third replied: „Use this all the time – it’s dangerous.“ Meanwhile, a fourth also commented: „The old recipes are the best.“

Victoria Sponge is a classic recipe loved by many Brits, and it’s the perfect treat for summer. Simple, but delicious, the tempting cake has been filling tummies for years.

It was named after Queen Victoria, who was known to enjoy a slice or two with her afternoon tea. Back then, it was only filled with jam, but most versions now tend to include cream.
